Russ [2], Kinney, Anthony [2]. Making a healthy oil even healthier:Â Production of omega-3 polyunsaturated fatty acids in soybean. Multiple studies have shown that inclusion of omega-3 long chain polyunsaturated fatty acids (LC-PUFAs), especially EPA (eicosapentaenoic acid, 20:5) and DHA (docosahexaenoic acid, 22:6), in the diet can have multiple health benefits including positive effects on cardiovascular and mental health. Although marine oils can be a rich source of EPA and DHA, processed fish oil is undesirable as a food ingredient because of the associated objectionable flavors and contaminants that are difficult and cost-prohibitive to remove. Oilseed plants engineered to produce EPA and DHA offer a safe, sustainable and cost-effective alternative to fish oils as a source of LC-PUFAs for food ingredients. Given the potential benefit, we have directed much effort towards producing an oilseed-derived source of LC-PUFAs. Towards this end, we have placed EPA and DHA biosynthetic pathways into soy and have produced commercially relevant levels of these omega-3 LC-PUFAs in the seed oil.
