Seasonality of Nutritional Constituents of Delmarva Seaweeds.

Seaweeds are used internationally for food, medicine, and industry but have not been examined in depth in the United States for the same purposes. In this study, a nutritional analysis of three edible seaweeds, Fucus vesiculosus (Phaeophyta), Gracilaria tikvahiae (Rhodophyta), and Ulva lactuca (Chlorophyta) collected from Chincoteague Memorial Park, Chincoteague, VA, and Indian River Inlet, DE, was conducted to establish seasonality of nutritional constituents, and investigate site variations. Samples of seaweeds were collected in summer and fall 2006, and analyzed for moisture, ash, protein, and fat. Water quality data such as temperature, salinity, chlorophyll, and pH were measured on each sample date with a multiparameter YSI unit. Water temperature varied from 20 °C (VA) to a maximum of 29.5°C (DE) in summer 2006 and decreased to 21° C in fall 2006 at both locations. Salinity was relatively constant around 28-29 ppt at both locations during the sampling time period, and the pH was 7.6. Chlorophyll at the Delaware locality (2.8-3 μg/L) was about half the quantity found at the Chincoteague locality (6.1-5.31 μg/L) during both seasons. Seasonal and site variations were observed over the sampling period. Fucus moisture significantly decreased from summer to fall 2006 for both the localities (VA 76-62% and DE 77-67% respectively). Fucus fats did not significantly change at the Chincoteague locality, but significantly decreased overall from summer to fall 2006 at the Delaware locality (1.35-0.64%). There were significant changes from summer to fall in the ash content for both Fucus (23-27 %) and Gracilaria (22-16%) in the VA samples but not in the DE samples. Proteins significantly increased from summer to fall for all three species in both locations. The data indicate that seasonal variation in some nutritional components exists both within and between sites.
